I have been toying with this one for several years -
You see, I am Italian-American and grew up in a close family with lots of foods and traditions. We have many "secret" family recipes of foods that you just do not see in restaurants or at stores. But I never wanted to open a pasta or pizza place, for many reasons.
Meanwhile, a few years ago I met with a guy who sells bread at the Downtown Farmer's Market. His numbers were incredible for a 6-month business. I bake my own foccacias and other breads and make panini sandwiches for friends and family.
So the thought came to me that the Farmer's Market could use a panini stall.
This would be an inexpensive test market for the business. I approached the management of the market with the idea, and they were receptive at the time. Several local restaurants have had their starts at the Farmer's Market over the years.
Southern Salt Lake County lacks a good Italian deli. I have a (family-approved) menu, business name and logo completed. There is a terrific Cottonwood Heights location available right now.
